Mexican Cauli Nourish Bowl

Nourish bowls are probably my all time favorite meal because they hit all my requirements. They are nutritious, delicious and simple! This Mexican cauli nourish bowl has shredded salsa chicken that is equally as good on tacos, crunchy red onion, and creamy avocado. It all pairs so nice together.



I love having a list of lunch ideas for each week to look back on when I need some inspiration. It can be so boring to have a turkey sandwich everyday. Although, I do love a good turkey sandwich-- it's always good to switch it up. The cool thing about "nourish bowls" are they are so versatile. As long as you have a veggie, a fiber filled carbohydrate, a protein source, and a healthy fat, you are good to go! Extras are always encouraged. Some of my favorites are lime juice, red onion, feta cheese, and chopped cashews. YUM!



Ingredients

(serves 2)


1 chicken breast

1/4 c salsa

taco seasoning of choice (I like cumin, garlic salt, chili powder, and dried oregano.)

2 c cauliflower rice

1 sweet potato

Chopped red onion

Cilantro

1 avocado

1 Lime

"Bitchin cilantro lime sauce" (optional but strongly encouraged! *I find mine at Fred Meyer.)


Directions


(1) Start with peeling and chopping the sweet potato into small chunks. Lightly cover in avocado oil and salt. Bake in the oven at 400 degree Fahrenheit for around 30 minutes or until browned.


(2) While the potatoes are cooking, start the chicken by placing the chicken breast in the instant pot covered in the salsa and taco seasonings. Cook on the steam setting for 8 minutes and let sit for 5 minutes once it is finished. For the slow cooker option, you will want to cook the chicken first by doing the same thing, but cooking on "low" for about two hours.


(3) While the chicken and sweet potatoes are cooking, you can start by steaming the cauliflower rice. Place cauliflower rice in a pot with a few tablespoons of water and cover on medium low for about 10 minutes. Lightly salt.


(4) Once the chicken is finished, you can shred it with two forks or you can shred it with a mixer. (which is much easier in my opinion)


(5) Start assembling the bowl by placing 1/2 the cauliflower rice mixture at the bottom of a bowl, then add 1/2 of the chicken, red onion, cilantro, 1/2 of the sweet potato, 1/2 of an avocado, and a squeeze of lime juice. Top with the "bitchin cilantro lime sauce." Save the other half for lunch another day or you can share with a friend.. or your husband if he's into the health sort of a thing. (Mine is not ;)) Enjoy!
