Garlic lemon tahini nourish bowl

Nourish bowls are my absolute favorite lunch! There are many combinations but this one has to be one of my favorites.. and as always, the credit goes to the dressing.

The key to making a delicious nourish bowl is to combine fresh ingredients both raw and cooked giving it both texture and flavor. Some of my favorite cooked additions are potatoes, squash, brussels sprouts, beans, cabbages and more.


I typically will make a nourish bowl for lunch because it is so fast and can easily be made without meat if you substitute for a bean or other plant-based protein source. But adding a meat source like chicken can be a great addition to "beef" it up and is something I like to do if I have more time or have some leftover meat to add in.


My new obsession has been tahini. I LOVE creating dressing with it because it gives the creamiest flavor and really pairs well with garlic. I mean, what doesn't pair well garlic?! One thing I can say is that the quality of the tahini makes a difference in the overall taste. Here is one that I love.

Feel free to substitute any vegetables or protein source for what you have on hand.


Here's the recipe:


The Base:

1.5 cups dark leafy greens

1/2 cup chopped sweet potatoes

1/2 cup chickpeas

1 chopped zucchini

handful of halved cherry tomatoes

sprinkle feta cheese

garlic powder

salt

paprika

avocado oil


The garlic lemon tahini dressing (2-3 servings):


1/8 cup olive oil or avocado oil

2 T warm water

2 garlic cloves

2 T tahini

juice of 1 lemon

1/2 tsp apple cider vinegar

1/4 tsp dijon mustard

1 tsp pure maple syrup


*Blend together in blender*





Directions:


Preheat the oven to 375 degrees. Chop sweet potatoes and zucchini and place on a baking sheet. Bake for around 25 minutes or until cooked. While those are cooking heat 1 teaspoon of avocado oil in a pan and add in drained and rinsed chickpeas on medium heat. Add some salt, garlic powder, and paprika to taste. Let them brown and then turn off the heat and set aside. Blend dressing and set aside. To assemble--- place dark greens, sweet potatoes, zucchini, chickpeas, tomatoes, feta in a bowl and top with the garlic lemon tahini dressing.
